Mac and Cheese. Essentially the best comfort food. Ever. For me? A one-two punch to sick town. Step in gluten-free/vegan mac and cheese. To. Die. For. Granted I haven't eaten the real thing in a very long while, this does the trick, can be made in 10 minutes, and I typically have everything I need in my cupboard.
At 3am, when the world seems to be peeling apart, mac and cheese is there for me.
Tip: Nutritional Yeast. If you've never used it, run to your local health food or bulk store and buy it. Run.
